Anyone out there have any suggestions on keeping the cabriolet top from
trying to pop up while driving against headwinds or over 80mph?

OK, I'll try to give you a serious answer. The top may pop up for a couple
of reasons. First, and most probable, is that the wood bow in the front may
be rotted, resulting in a loose latch. If the latches do not "snap" into
position with positive tension, look here first. A second reason may be the
top is not adjusted correctly. It may have shrunk over the years, or perhaps
it was fitted too tight right from the start. On your back wall you will
find rods with adjusting turnbuckles that attach the top to the body. You
cannot get a lot of adjustment out of them because they also serve to seat
the back bow of the top to the body, but I would rather have a little air
passing through the back bow than a top in the next town!
